A way not to forget our traditions

Two cuisines live side by side in the Hyblaean and Ragusan tradition: the popular, peasant one, built on simple ingredients and clear flavours, and the baronial one, rich and elaborate through Greek, Arab, French and Spanish rule.

At Gramole we want to rediscover with our guests the culinary journey that has brought us up to now: the wild herbs of the Iblei, the vegetables from the estate's garden, our extra virgin olive oil and the Nero d'Avola of Tenuta Chiaramonte.
