What new olive oil is
Olive oil in its first weeks of life
New olive oil, also called olio novello, is extra virgin olive oil that has just been pressed and goes on sale in the weeks after the harvest. This is when its aromas are at their peak: cut grass, artichoke, green tomato and almond, with livelier bitter and peppery notes.
On the Monti Iblei the harvest starts in autumn and the olives reach the mill the same day. At the mill, temperature control makes all the difference: here is why cold malaxation matters.
Over the months the oil becomes rounder and softer. New olive oil is a seasonal experience: enjoy it in its first months, when its aromas are freshest.
How to recognise and enjoy it
Colour and aroma
Freshly pressed oil often has deep green tints and a clear scent of grass and fresh fruit. Colour alone does not prove quality: nose and palate matter most.
Bitter and peppery
A peppery sting in the throat and a bitter note are good signs: they point to polyphenols, the antioxidants found in a good extra virgin olive oil. In new oil they are stronger.
In the kitchen
Use it raw to really taste it: on warm bread, bean soups, grilled vegetables and barbecued meat. A drizzle is enough to change the dish.

New olive oil: frequently asked questions
What is new olive oil?+
It is extra virgin olive oil from the latest harvest, freshly pressed and sold in the weeks after milling. It has fresher aromas and a more intense taste than an oil a few months old.
When is the 2026 new olive oil available?+
On the Monti Iblei the harvest takes place in autumn. Oils from the 2026/2027 season are on sale once the product page shows the new season. If an oil is sold out, you can ask to be notified when it is back in stock.
Why is new olive oil bitter and peppery?+
Bitterness and pepperiness come from polyphenols, natural antioxidants that are more abundant in freshly pressed oil. They are not defects: they are a sign of freshness and quality.
How should I store new olive oil?+
Like any extra virgin olive oil: away from light and heat, between 14 and 18 °C, in its tightly closed container. For the best flavour, use it within 12-18 months of pressing.
Are new olive oil and olio novello the same thing?+
Yes, they are two names for the oil of the season just ended. What matters is that the harvest year is stated, as we do for all our oils.
