L'Amabile is our 100% Italian organic extra virgin olive oil, a skilful blend of selected Sicilian cultivars crafted to produce an oil of soft, enveloping character. The taste is sweet with notes of ripe almond and a clean, almost buttery finish, with barely perceptible bitterness and pepperiness. Created to be an everyday oil without compromising on quality: excellent for light frying thanks to its high smoke point, perfect for cooking vegetables, bread and focaccia doughs, and equally good raw in preparations that call for delicacy. Ragusan oil focaccia
Simple dough with ancient grain flour, water, yeast and salt, stretched in a baking tray and generously drizzled with L'Amabile before and after baking. Oregano, sun-dried cherry tomatoes and Giarratana onion complete an afternoon snack.
Crispy roasted potatoes
Sicilian new potatoes cut into wedges, fresh rosemary, unpeeled garlic and generous L'Amabile. High-temperature roasting for a golden crust and soft interior. The oil's natural sweetness becomes the secret of a side dish that never gets old.
